I’d like to consider summers end when the final tomato crop drops from their toasty stems. From what I can tell that’s not anytime soon!
It’s truly the only time of year I pop these little rounds like I would blueberries. Especially sweet and lightly crisp.
Ways to make tomato perfection which I often crave around lunch time.
1. Lightly toasted country loaf + hellmans mayo + cracked black pepper + sliced tomato + kosher salt — open faced or sammie style.
2. Mesclun + toasted or garlic bread croutons + tomatoes + salt and vinegar pistachios + tahini, evoo, and lemon, smoked paprika, pepper, salt, made into a dressing.
3. Cherry tomatoes + cannellini beans + olive oil + white balsamic + grated garlic clove + cracked black pepper + salt
