Remnants from Last Night
I always love a good dense chocolate torte after a heavy meal. There is no sense in having something light after a heavy meal, just keep eating delectable things! I also had a bottle of Rosa Regale- sparkling red wine- that pairs perfectly with chocolate, another reason why I made the cake. No dessert is complete without whipped cream, heck even if it's from a can it will satisfy you. Raspberry gastrique folded into whipped cream creates a little bit of tang on the chocolate suffocated palate. A gastrique is one part sweet and one part sour, so with the addition of an acid in the gastrique- like lemon juice or white balsamic vinegar- and a splash of port it makes for a less fatty mouth-feel.
